




Salad vegetables are a good source of minerals, vitamins, fibre and water. Apart from nutritional benefits, they add texture, colour and taste to everyday meals. Salads are not a very filling or sustaining by themselves but are ideal when used as an accompaniment with other meals.
Seafood contains protein, minerals, vitamins, polyunsaturated fats and omega 3 oils.
Some proteins have a structural role, eg tendons, ligaments, hair and muscles. Other proteins work as enzymes and hormones, also for growth and repair of body tissues. Some proteins help in our immune system and in blood clotting.
Fruit contains carbohydrates, fibre, vitamins and minerals. They are a very important source of fibre, especially when the skins of the fruits are eaten. Fibre is particularly important in a diet because it acts as roughage or bulk. Fibre is not digestible and therefore passes straight through the digestive system more quickly than without fibre.
